This technology allows us to supply our customers with butter that is immediately ready for use, while maintaining its quality and texture.
FL has state-of-the-art infrastructure to temper butter from -18 °C to +4 °C in 72 hours while preserving its full molecular structure.
Tempering frozen butter means gradually and evenly warming butter from a hard, fully frozen state to a controlled, workable temperature. This is mainly done so that the butter can be processed (cut, mixed, or packaged) without damaging its texture.
Tempering is essentially a controlled defrosting step: the temperature of the butter is raised from frozen (often around -18 °C in industry) to a higher range where the butter is firm but plastic and can be worked. This step is intended to soften the butter evenly so that the fat crystals and water phase are not “shocked.” This helps maintain a smooth texture and high quality.
In industrial butter production and packing, bulk butter is commonly stored frozen for many months and then tempered before it is portioned or wrapped. If frozen blocks were used directly, they would be too hard for machinery, could crumble, and would give uneven product structure.
Tempering can take place in tempering rooms or chambers where air temperature and time are controlled so that the core temperature of the butter block reaches the desired range uniformly. Food Logistics can carry out this process for multiple trucks simultaneously within 72 hours in a special fully automated chamber.
